Thai Veg Green Curry!

Thai Food! Wow the very word for me is mouth watering (but,yes only vegetarian Thai food since am a vegetarian).Here In dubai, whenever we go to malls for an outing, I often prefer to have something healthy and tasty, however healthier options in mall food outlets are few.I most often try to find a Thai restaurant so that I can get to eat my favorite Thai curry which is healthy as  well as tasty with its sweet and creamy coconut milk base ,tender and hearty vegetables.

A couple of days back when I went grocery shopping , I found this set of  ingredients to make the Thai curry paste,I instantly picked it up so that I could try this wonderful dish.You  do get ready made paste for the Thai curry but not everything is purely vegetarian.So I preferred to make the paste at home.If you haven’t tried your hands on making Thai curry from scratch yet then definitely need to try this.You will be amazed how quick and easy it is to make this wonderful green Thai curry at home with handful of ingredients and few minutes.

Thai curry with a side of steamed rice makes a wholesome and appetizing meal.Make it for lunch or dinner-it is just perfect!

Thai cuisine is an amalgamation of spices, herbs and rich flavours. The goodness of lemongrass, kaffir lime leaves are rich in vitamins, iron and anti-oxidants.Most all the ingredients associated with Thai food, are packed with healing properties, like the spices and herbs used contain powerful properties that can among many things, help fight inflammation, protect the body from toxins and free radicals which cause cancer and other auto immune diseases and generally make one feel better just by consuming them.

This might not be the most authentic Thai curry-because its vegetarian and have my own twists but you will definitely fall in love with it.


Thai Veg Green Curry!

Serving Size                                         3 portions

Preparation Time                             15 mins

For curry Paste

Coriander Leaves  with stems                           3/4 cup finely chopped

Galangal/Ginger                                                   1 inch

Lemon grass                                                          1 long stem chopped

lemon Juice                                                           1 medium size lemon

Kaffir Lime leaves                                               2-3(if not availabe just add 1/2 tsp of lemon zest)

Green Chillies                                                      2-3(adjust to your spice level)

Coriander Powder                                              1 tsp

Cumin Powder                                                    1 tsp

Salt to Taste

For the rest of the curry 

Brocolli                                                              1/2 cup

Carrot                                                                  1 medium size

Mushrooms                                                      5-6 mushrooms

Baby  corn                                                        5-6

Snow peas                                                        6-8

Coconut Milk                                                   1 can

Salt to Taste

Pepper Powder                                                 1 tsp

Oil                                                                         1 tbsp(I used olive oil)

Water                                                                  1/4 cup(if needed only)

(you can add veggies like beans,also tofu for some protein,zucchini)

Method to Make It :

  • Grind all the ingredients of the Thai curry paste until smooth.
  • In a pan, heat the oil.
  • Add the veggies and cook for two mins.
  • Add the curry paste and saute the veggies in the paste for about 2 mins
  • Now add the coconut milk  and if its too thick u can add some water to thin it.
  • Add salt and little pepper powder and adjust the taste accordingly.
  • Let the curry cook for about 3 -4 mins and then turn off the gas.
  • Serve the curry with hot steamed rice of your choice.

The combination of spicy curry paste and the delicate and sweet flavour of coconut milk accompanied with hot steamed rice tastes absolutely divine.
